Mayonnaise - HomeMade

Mayonnaise - A good companion for salads and the base of most of the salad dressings.
Store-bought mayonnaise have lots of fats and oil contained in it; of course, really yummy to the tongue, but might not be the same for our li'l tummy.

We do prefer salads before many of our meals and hence, a salad dressing would be of high demand in our family. I tried investigating into the different ways of preparing mayonnaise. I would say it seems to be easy to prepare it at home rather than increasing the frequency of store visits. It requires very common ingredients; the only one that may trouble you would be the Mustard. You can grind mustard with or without peel-on; I would however suggest the latter one as it makes the mayonnaise immensely richer, creamier and tastier.

Check out the simplest and healthiest recipe that I came out with:-

Ingredients (Serves 2)

Egg yolks - 2
Mustard - 2 tbsp
Lemon juice - 2 tsp
Oil (preferably Olive Oil) - 1 to 11/2 cups
Black pepper - as needed
Salt - as needed

Method

Just put all the ingredients in a blender, and blend in low speed, adding oil little by little until you have the desired consistency.

Broccoli Salad

I am an ardent fan of Sweet Tomatoes and I make it a point to go there often. The food is not only awesome to the taste, but also nutritious. Being a vegetarian, or rather, eggitarian, I treasure going there. You have so many varieties of salads, soups, fruits and bakery items in store in the buffet, that your belly would rather tell you - "NEXT TIME PLEASE" or "GIVE ME AN INTERMISSION".. haha

I found their Broccoli Salad really marvelous. It has a touch of sweetness, good crunch, is fresh and vibrant. In fact, it contains bacon, which I used to filter while having, so my recipe too refrains from using bacon pieces. Quoting the recipe for you my friends...

Joan's Broccoli Madness Salad

Ingredients

Dressing:
Mayonnaise - 1 cup
Sugar -1 tbsp
Apple Cider vinegar -2 tbsp

Salad:
Broccoli (florets) - 1/2 stems
Cashews - 1/2 cups
Raisins - 1/2 cup
Onion (red - chopped) - 1/4 cup

Method
  • Wash broccoli and cut into florets. Chop off hard stems.
  • In a bowl, add broccoli florets, cashews, raisins and onion.
  • Mix the ingredients of dressing in another bowl.
  • Toss the salad mixture with the dressing.
  • Cool in fridge for few minutes before serving. Serve.
